Oven Baked Gluten Free Doughnuts!

IMG_20151001_125238Just when I thought I’d created a beautiful Oven Baked Gluten Free Cinnamon Doughnut, I go and create these beauties! My husband says they taste like the real thing!

I’ve coated half in a sugary coating and the other half in a vanilla glaze! But to be honest you could put icing on them and decorate them with gluten free sprinkles…..or how ever you wish!

Gluten Free Oven Baked Doughnuts! (Makes 6)

Ingredients

  • 1 teaspoon of fast action yeast
  • 1 tablespoon warm water
  • 140g Doves Farm gluten free bread flour
  • 140g sugar
  • 3/4 teaspoon gluten free baking powder
  • 1/4 teaspoon salt
  • 1 egg (beaten)
  • 110mls buttermilk
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract.

For the Sugar coating……

  • 3 tablespoons melted butter
  • 150g Sugar

For the vanilla glaze….

  • 2 tablespoons melted butter
  • 100g Icing sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk

Equipment 

  • 6 bun doughnut pan (well greased)
  • Pastry brush
  • Disposable piping bag

Method 

  • Preheat oven to 170ºC.
  • Place the yeast in a a small cup, add the warm water and mix well, place to one side.
  • Sift the flour and baking powder into a mixing bowl, then add the sugar and salt and using a hand held balloon whisk mix together thoroughly (using a balloon whisk keeps the flour mix very light and airy).
  • Place the egg, buttermilk, melted butter and vanilla extract into a measuring jug and beat together thoroughly.
  • Add the yeast mixture to the egg mixture and mix well.
  • Pour the wet ingredients into the dry ingredients and mix well with a hand balloon whisk
  • Place in the piping bag and cut off the end by approximately 1 inch.
  • Pipe the mixture into the doughnut pan.

  • Bake for approximately 10 minutes until the doughnuts are firm but still quite pale.
  • One at a time, gently remove from the pan turn upside down (the bottoms should be a lovely golden colour, if not leave them in place and put them back in the oven for another 3-4 minutes) then place them back in the tin and continue to bake for another 8-10 minutes until the doughnuts are golden brown all over.

For the sugar coated doughnuts….

  • Whilst the doughnuts are still hot brush with the melted butter, dunk in the bowl of sugar, coating both sides, place on a cooling rack and leave to cool completely.

For the vanilla glazed doughnuts. …

  • Remove from the pan and place on a cooling rack while you make the glaze.
  • Place the butter, icing sugar, vanilla extract and 1 tablespoon milk in a saucepan and gently heat whisking continuously until the mixture becomes runny, if the mixture is too thick, gradually add the extra milk until the mixture is runny.
  • Remove from the pan from the heat.
  • Carefully one at a time, place one side of the doughnuts into the glaze, turn over and glaze the other side until it’s completely coated in a light layer of the glaze. Place on the cooling wrack to cool completely.

  1. These look gorgeous but what can I use instead of buttermilk please. Would soya milk with a bit of lemon do, or thinned sheeps yougurt perhaps? Thanks
